Make-along: Intro to Pickling

Homemade pickles are a delicious probiotic snack. In this hands-on introduction to pickle making you will prepare a jar of lacto-fermented cucumbers which will start pickling immediately and will be ready to eat, or move to the fridge in a few days.  We will cover safety precautions and how to avoid an off batch. Lacto-fermentation of vegetables is very safe with no risk of botulism because of the salty and acidic environment. However, you do need to know how to identify and avoid mold.  The materials you’ll take home can be reused indefinitely, and can be used for many different recipes including sauerkraut, pickled beans and other vegetables. A reminder sheet is included with instructions for making your next batch.

Instructor Bio:

Kate is a member at IFL and has helped run several makerspaces around the country.  Her newest venture in pickle making is greatly appreciated by all who attend Open Houses on Mondays, where she brings her newest recipes to share.
